What are you doing Saturday?

My train ticket is booked and my ticket has been staring down at me from my tack-board since January. It’s safe to say I’m a little bit more than excited for Toronto Island this weekend. An all day jam with some of my favourite bands? Yes, this will be an epic weekend.

Pavement, Broken Social Scene, Band of Horses, Beach House, Timber Timbre, Zeus, The Beauties and Flash Lightnin’.

Can you say “amazing”. I know, I know…I am also stuttering. It’s been almost a year since my last rendezvous with BSS, and EXACTLY one year ago today if I remember correctly since I bumped into the lovely Mr. Brendan Canning at Grizzly Bear, where Feist made a special, and awesome appearance…

I’ll be posting photos, but unfortunately my SLR will not be able to enter. They are “prohibited” so the photos I post won’t be of uh, the best quality. Sadness, right? That’s why instead of looking at my photos, you should just get your hands on a ticket and sail on over!

If I never return to post again it is because I have died from an overload of awesome.

What I do

I find that cooking and baking make me feel better when I’m down. I don’t know why…it just does.

The last few days have been pretty awesome. I bought a bunch of avocados so I’ve been thinking of different things I could do with them. I’ve had them on mini pizzas, in pasta, blended up for some guacamole, and even on sandwiches.

My next avocado project will be a soup! Probably made tomorrow…just in time for a lovely picnic in the park!

The other day I made rice with lemon and almonds. I also put in some parsley and yellow peppers, as well as some ginger.

I’m working on this whole pictures of food thing…it’s actually more difficult than you would think!

I also decided to make my roommates and I a little treat, and one that also happens to be vegan friendly if made with soy milk!

Blueberry and raspberry cobbler…it is a little bit of heaven. I think a peach cobbler will be in order for the next round of deserts.

And as for my avocado fix of the day…

pasta, with pesto, garlic, tomato sauce, yellow peppers, and avocado, obviously. Also, I put a few cubes of brie on top. So good.

Foodies

It’s happening. I am becoming obsessed with cooking and making creations out of what could have been “plain jane”. If I’m not careful, this could totally become a food blog.

All of my creations of the past week have been great, and without failure so far. I am waiting to take a bite of my lunch soon and have it be disgusting…woops!

I guess I should start taking pictures before I feast, because most of the time I find pictures more effective than a description. Also, who wants to read when you can look? I have learned this from my recent museum of nature experience!

Creations of the week include:

a) mandarin dijon chicken with rice. The trick is to add corn starch to the mandarin juice and dijon, it thickens up when heat is added quite nicely. Also, don’t throw the actual mandarins into the frying pan until the last 30 seconds, or else they could get mushy and gross. Ick.

b) honey and oat bread, and cinnamon oat bread. YUM!

c) banana muffins!

d) pesto mini pizzas. I found myself lacking pizza sauce, and with plenty of pesto! cheese, veggies, and maybe some ham if you’re up to it. Also…pineapple!

e) apple and brie grilled sandwich.

f) tuna mixed with arugula and almond dip (PC, new, and amazing, and introduced to me by a co-worker), with slices of apples and pineapple inside a pita! Delish! Chicken would probably do the trick as well!

g) Sandwiches can be great meatless! In fact I find the meatless ones to be the most enjoyable! Although I’m not a vegetarian, I eat very little meat, and I find veggie dishes to be amazing. Today I made a sandwich with the following on it (and grilled of course, because I have a weird obsession with grilled sandwiches): pesto, avocado, tomato, cucumber, red pepper, and brie. I was lacking beets and sprouts which would have made an awesome addition!

h) linguine with broccoli and peppers. Make your own sauce! Because it’s boring to always have the same old tomato sauce. Try sunflower oil with spices like oregano, parsley and pepper. You can also add pesto, which as you can probably see by now is a staple of mine.

I will probably go on some cooking spree tomorrow for my lunch. Hopefully this time I remember to take pictures before mowing down. Hope you try some of my ideas, because you probably will not regret it!

Basic brain stimulation

Working full time leaves me very little time for blogging after doing many other activities. But a lot has happened and I feel this is important to discuss.

How many people have died in the last couple of weeks?

A TON! It’s actually a bit crazy…Gary Coleman’s death was a shocker for me…

Also, that statue that people may or may not hate in front of the Art Gallery downtown. Well, the woman that made that thing died at the tender age of 98. Don’t hate on Louise Bourgeois or her kickass art. That sculpture is rockin’.

Not to pick favourites, but Dennis Hopper takes the cake. I’m gonna miss that man and his eccentric ways. Easy Rider…if you have not seen it, you must do that as soon as possible. I know I’ll be watching (and listening to the sweet soundtrack) in honour of good ole Mr. Hopper.

I know I am ignoring many others just as the Oscar’s ignored Farrah. But I’m going to have to cut it short, as those were my top three disappointments of the week. And bad things always happen in threes…

I promise you though…good things will come. Maybe not today, but most likely tomorrow, or my day off.
